Instructions
Step 1: Prepare the Avocado Mash
- In a small bowl, scoop out the flesh of the avocado and mash it with a fork until smooth or chunky, depending on your preference.
- Add the lime juice, salt, and black pepper to the mashed avocado and mix well. Taste and adjust seasoning if needed.
Step 2: Cook the Eggs
- For Poached Eggs:
- Bring a small pot of water to a gentle simmer. Add a splash of vinegar (optional) to help the egg whites set.
- Crack an egg into a small bowl and carefully slide it into the simmering water. Cook for 3-4 minutes until the whites are set but the yolk remains runny.
- Remove with a slotted spoon and set aside. Repeat with the second egg.
- For Fried Eggs:
- Heat 1 tablespoon of olive oil or butter in a nonstick skillet over medium heat.
- Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny (about 2-3 minutes). For sunny-side-up eggs, cook without flipping; for over-easy eggs, flip gently and cook for an additional 30 seconds.
- For Scrambled Eggs:
- Whisk the eggs in a small bowl with a pinch of salt.
- Heat 1 tablespoon of olive oil or butter in a skillet over medium-low heat. Pour in the eggs and cook, stirring gently with a spatula, until soft and creamy (about 2-3 minutes).
Step 3: Make the Spicy Chili Butter
- In a small saucepan or skillet, melt the butter over medium heat.
- Stir in the olive oil (if using), smoked paprika, red chili flakes, garlic powder, cumin (if using), and a pinch of salt. Cook for 1-2 minutes, stirring frequently, until the butter becomes fragrant and slightly bubbly. Be careful not to burn the spices.
- Remove from heat and set aside.
Step 4: Assemble the Toast
- Spread the mashed avocado evenly over the toasted bread slices.
- Top each slice with a cooked egg.
- Drizzle the spicy chili butter generously over the eggs and avocado toast.
Step 5: Garnish and Serve
- Add your choice of toppings, such as crumbled feta, chopped cilantro, or sesame seeds, for added flavor and texture.
- Serve immediately and enjoy your spicy, flavorful toast!
