  • 2 tbsp honey
  • 2 tbsp fresh lime juice (about 1 lime)
  • 1 tsp lime zest
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper (adjust for spice preference)
  • ½ tsp salt
  • ¼ tsp black pepper

For searing:

  • 1 tbsp olive oil or butter
  • Additional lime wedges for serving
  • Fresh cilantro or parsley for garnish

Instructions

Step 1: Prepare the Shrimp

  1. Rinse the shrimp under cold water and pat them dry with paper towels. Dry shrimp sear better and ensure the marinade clings well.
  2. Place the shrimp in a medium bowl or a resealable plastic bag.

Step 2: Make the Marinade

  1. In a small bowl, whisk together the honey, lime juice, lime zest, olive oil, garlic powder, smoked paprika, cumin, cayenne pepper, salt, and black pepper. Taste and adjust the spice level if desired.
  2. Pour the marinade over the shrimp, ensuring they are evenly coated. Cover the bowl or seal the bag and refrigerate for 10-15 minutes.

Step 3: Sear the Shrimp

  1. Heat a large skillet (preferably cast iron or nonstick) over medium-high heat. Add 1 tablespoon of olive oil or butter.
  2. Once the skillet is hot, remove the shrimp from the marinade, shaking off any excess liquid. Reserve the remaining marinade for later.
  3. Arrange the shrimp in a single layer in the skillet. Cook for 2-3 minutes on one side until the shrimp turn pink and slightly caramelized.
  4. Flip the shrimp and pour the reserved marinade into the skillet. Cook for another 2-3 minutes, allowing the marinade to reduce and coat the shrimp. Remove from heat once the shrimp are opaque and cooked through.

Step 4: Garnish and Serve

  1. Transfer the shrimp to a serving platter and drizzle with any remaining sauce from the skillet.
  2. Garnish with fresh cilantro or parsley and serve with lime wedges for an extra burst of flavor.
  3. Enjoy hot as a main dish, appetizer, or part of a larger meal.
