  • ¼ cup green onions, finely chopped
  • ½ teaspoon chili flakes (adjust to taste)
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon hot sauce (optional, for extra heat)
  • ¼ cup finely diced red bell pepper (for texture and sweetness)
  • 1 tablespoon chopped fresh parsley or cilantro
  • 2 tablespoons olive oil (for frying)

Instructions

Step 1: Prepare the Shrimp

Start by patting the shrimp dry with a paper towel to remove excess moisture. This step is important because excess water can make the patties fall apart. Once dry, place about ¾ of the shrimp in a food processor and pulse until it forms a chunky paste. This will help bind the patties without the need for too many additional ingredients.

Take the remaining shrimp and chop them into small pieces—this adds a nice texture to the patties so they’re not completely smooth but have little bites of shrimp in every mouthful.

Step 2: Mix the Ingredients

In a large mixing bowl, combine the shrimp paste, chopped shrimp, breadcrumbs, egg, mayonnaise, mustard, lemon juice, minced garlic, green onions, chili flakes, smoked paprika, salt, black pepper, hot sauce, and diced bell pepper. Mix everything together until well combined.

At this stage, the mixture should be slightly sticky but still easy to form into patties. If it’s too wet, add a little more breadcrumbs. If it’s too dry, you can mix in an extra teaspoon of mayo or a splash of lemon juice.

Step 3: Shape the Patties

Using clean hands, divide the mixture into equal portions and shape them into small, round patties, about ½ inch thick. You should get around 4 to 5 patties, depending on the size.

Place the patties on a plate and let them rest in the refrigerator for about 10 minutes. This step helps them firm up so they hold their shape better when cooking.

Step 4: Cook the Patties

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, carefully place the shrimp patties in the pan. Cook for about 3 to 4 minutes per side, or until golden brown and crispy on the outside and fully cooked on the inside. Avoid pressing down on them while they cook, as this can make them dry out.

If you’re unsure whether they’re done, use a fork to gently break one open—it should be firm and opaque all the way through, with no translucent spots.

Step 5: Serve and Enjoy

Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve immediately with your favorite dipping sauce, a squeeze of fresh lemon juice, or inside a sandwich with spicy mayo and crisp lettuce.
