For the Baked Potatoes:

- 1 tbsp kosher salt
- ½ tsp black pepper
For the Steak Bites:
- 1 lb sirloin steak (or ribeye), cut into bite-sized pieces
- 2 tbsp olive oil or butter
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp Worcestershire sauce
For the Toppings:
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup cooked bacon bits (optional)
- ¼ cup green onions, chopped
- 2 tbsp butter (for extra richness)
Instructions
1. Bake the Potatoes
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
- Poke each potato several times with a fork to allow steam to escape while baking.
- Rub the potatoes with olive oil, salt, and pepper, ensuring they are well-coated.
- Place them directly on the oven rack and bake for 50-60 minutes, or until the skins are crispy and the insides are soft. You can check doneness by inserting a fork—it should slide in easily.
2. Prepare the Steak Bites
- While the potatoes are baking, cut the sirloin steak into bite-sized cubes.
- In a bowl, toss the steak pieces with garlic powder, smoked paprika, salt, black pepper, and Worcestershire sauce. Let them marinate for at least 10 minutes while the potatoes continue baking.
- Heat olive oil or butter in a large skillet over medium-high heat.
- Add the steak bites in a single layer, cooking for 2-3 minutes per side, until they develop a brown crust but remain juicy inside.
- Remove the steak bites from the heat and let them rest for a few minutes before serving.
3. Assemble the Loaded Baked Potatoes
- Once the potatoes are baked, carefully slice them open lengthwise. Fluff the insides with a fork and add a small pat of butter to each.
- Sprinkle cheddar cheese over the hot potatoes and let it melt.
- Top with the steak bites, spreading them evenly across each potato.
- Add a generous scoop of sour cream, then sprinkle with bacon bits and green onions.
- Serve immediately and enjoy!
