Steak Bites on Loaded Baked Potatoes

  • Author: Amelia
  • Total Time: 1 hour 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Baked Potatoes:

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • ½ tsp black pepper

For the Steak Bites:

  • 1 lb sirloin steak (or ribeye), cut into bite-sized pieces
  • 2 tbsp olive oil or butter
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp Worcestershire sauce

For the Toppings:

  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup cooked bacon bits (optional)
  • ¼ cup green onions, chopped
  • 2 tbsp butter (for extra richness)

Instructions

1. Bake the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
  3. Poke each potato several times with a fork to allow steam to escape while baking.
  4. Rub the potatoes with olive oil, salt, and pepper, ensuring they are well-coated.
  5. Place them directly on the oven rack and bake for 50-60 minutes, or until the skins are crispy and the insides are soft. You can check doneness by inserting a fork—it should slide in easily.

2. Prepare the Steak Bites

  1. While the potatoes are baking, cut the sirloin steak into bite-sized cubes.
  2. In a bowl, toss the steak pieces with garlic powder, smoked paprika, salt, black pepper, and Worcestershire sauce. Let them marinate for at least 10 minutes while the potatoes continue baking.
  3. Heat olive oil or butter in a large skillet over medium-high heat.
  4. Add the steak bites in a single layer, cooking for 2-3 minutes per side, until they develop a brown crust but remain juicy inside.
  5. Remove the steak bites from the heat and let them rest for a few minutes before serving.

3. Assemble the Loaded Baked Potatoes

  1. Once the potatoes are baked, carefully slice them open lengthwise. Fluff the insides with a fork and add a small pat of butter to each.
  2. Sprinkle cheddar cheese over the hot potatoes and let it melt.
  3. Top with the steak bites, spreading them evenly across each potato.
  4. Add a generous scoop of sour cream, then sprinkle with bacon bits and green onions.
  5. Serve immediately and enjoy!
