Instructions
Step-by-Step Instructions
Step 1: Prepare the Steak
- Season the steaks: Pat the steaks dry with paper towels. In a small bowl, mix the salt, black pepper, garlic powder, and smoked paprika. Rub the seasoning mixture evenly over both sides of each steak.
- Sear the steaks: Heat a large cast-iron skillet or grill pan over medium-high heat. Add olive oil to the pan and let it heat until shimmering. Place the steaks in the pan and sear for 3-4 minutes on each side for medium-rare (or longer depending on your preferred doneness). Remove the steaks from the pan and let them rest on a plate covered loosely with foil.
Step 2: Cook the Shrimp
- Season the shrimp: Sprinkle the Cajun seasoning over the peeled and deveined shrimp. Toss to coat evenly.
- Sear the shrimp: In the same skillet, melt 1 tablespoon of butter over medium heat. Add the shrimp in a single layer and cook for 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Step 3: Make the Cajun Shrimp Sauce
- Cook the garlic: Add the remaining tablespoon of butter to the skillet. Stir in the minced garlic and red pepper flakes (if using) and sauté for 1-2 minutes until fragrant.
- Deglaze the pan: Pour in the chicken or seafood stock, scraping the bottom of the skillet to release any browned bits. Simmer for 2-3 minutes to reduce slightly.
- Add the cream and Parmesan: Lower the heat and stir in the heavy cream and Parmesan cheese. Simmer gently, stirring frequently, until the sauce thickens slightly, about 3-4 minutes.
- Season the sauce: Add smoked paprika, lemon juice, and salt and pepper to taste. Return the cooked shrimp to the skillet and toss to coat them in the sauce.
Step 4: Combine and Serve
- Plate the steaks: Place each steak on a serving plate. Spoon the creamy Cajun shrimp sauce generously over the top of each steak.
- Garnish and serve: Sprinkle with fresh parsley and serve with lemon wedges on the side for an extra burst of brightness.
