Instructions
Step 1: Prepare the Cheesecake Filling
- In a medium mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and heavy cream.
- Beat the mixture with a hand mixer or whisk until smooth and creamy.
- Transfer the cheesecake filling to a piping bag or resealable plastic bag for easy spreading. Refrigerate until ready to use.
Step 2: Make the Strawberry Topping
- In a small saucepan over medium heat, combine the sliced strawberries, granulated sugar, and lemon juice.
- Cook for 5–7 minutes, stirring occasionally, until the strawberries release their juices and soften.
- In a small bowl, mix the cornstarch with water to create a slurry. Add the slurry to the strawberry mixture and stir well.
- Cook for an additional 1–2 minutes, or until the sauce thickens. Remove from heat and let cool.
Step 3: Prepare the French Toast Batter
- In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
Step 4: Assemble the Stuffed French Toast
- Spread a generous layer of the cheesecake filling on one slice of bread. Top with another slice to create a sandwich. Repeat with the remaining bread and filling.
- Dip each “sandwich” into the egg mixture, ensuring both sides are well coated.
Step 5: Cook the French Toast
- Heat a large skillet or griddle over medium heat and melt a small amount of butter or oil.
- Place the dipped sandwiches in the skillet and cook for 2–3 minutes per side, or until golden brown and cooked through.
- Repeat with the remaining sandwiches, adding more butter or oil as needed.
Step 6: Serve
- Place the cooked French toast on a serving plate and spoon the strawberry topping over each slice.
- Dust with powdered sugar and garnish with whipped cream and fresh mint leaves, if desired.
