Instructions

Step 1: Prepare the Cheesecake Filling

  1. In a medium mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and heavy cream.
  2. Beat the mixture with a hand mixer or whisk until smooth and creamy.
  3. Transfer the cheesecake filling to a piping bag or resealable plastic bag for easy spreading. Refrigerate until ready to use.

Step 2: Make the Strawberry Topping

  1. In a small saucepan over medium heat, combine the sliced strawberries, granulated sugar, and lemon juice.
  2. Cook for 5–7 minutes, stirring occasionally, until the strawberries release their juices and soften.
  3. In a small bowl, mix the cornstarch with water to create a slurry. Add the slurry to the strawberry mixture and stir well.
  4. Cook for an additional 1–2 minutes, or until the sauce thickens. Remove from heat and let cool.

Step 3: Prepare the French Toast Batter

  1. In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Step 4: Assemble the Stuffed French Toast

  1. Spread a generous layer of the cheesecake filling on one slice of bread. Top with another slice to create a sandwich. Repeat with the remaining bread and filling.
  2. Dip each “sandwich” into the egg mixture, ensuring both sides are well coated.

Step 5: Cook the French Toast

  1. Heat a large skillet or griddle over medium heat and melt a small amount of butter or oil.
  2. Place the dipped sandwiches in the skillet and cook for 2–3 minutes per side, or until golden brown and cooked through.
