For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the Filling:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, diced
For the Topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Additional fresh strawberries for garnish
Instructions
Step 1: Prepare the Crust
- In a medium bowl, combine the graham cracker crumbs and granulated sugar. Add the melted butter and mix until evenly moistened.
- Press the mixture into the bottom and up the sides of a 9-inch pie pan to form a crust. Chill in the freezer for 15–20 minutes while preparing the filling.
Step 2: Make the Whipped Cream
- In a chilled bowl, beat 1 cup of heavy whipping cream with 1/4 cup powdered sugar until stiff peaks form. Set aside.
Step 3: Prepare the Filling
- In a large bowl, beat the softened cream cheese until smooth. Add the sweetened condensed milk and vanilla extract, and mix until well combined.
- Gently fold in the whipped cream from Step 2 until smooth.
- Fold in the diced strawberries, distributing them evenly throughout the filling.
Step 4: Assemble the Pie
- Pour the filling into the prepared crust and smooth the top with a spatula.
- Cover with plastic wrap and freeze for at least 6 hours, or until firm.
Step 5: Add the Topping
- Just before serving, whip the remaining 1 cup of heavy cream with 2 tablespoons powdered sugar until soft peaks form. Spread or pipe the whipped cream over the frozen pie.
- Garnish with additional fresh strawberries or a sprinkle of graham cracker crumbs for extra flair.
