- Zest of 1 orange
- 2 tablespoons honey (or maple syrup)
- 3 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon chili flakes (optional, for spice)
- 1 tablespoon fresh cilantro or parsley, chopped
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- Lemon and lime slices, for garnish
- Fresh cilantro or parsley, for garnish
Instructions
Step 1: Prepare the Marinade
In a mixing bowl, whisk together the olive oil, citrus juices (lemon, lime, and orange), citrus zest, honey, minced garlic, salt, black pepper, smoked paprika, cumin, and chili flakes. Stir until well combined.
Step 2: Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, but preferably overnight for maximum flavor.
Step 3: Preheat the Grill
Preheat your grill to medium-high heat (375–400°F). Lightly oil the grates to prevent sticking.
Step 4: Grill the Chicken
Remove the chicken from the marinade, letting excess liquid drip off. Place the chicken on the grill and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Step 5: Rest and Serve
Transfer the grilled chicken to a plate and let it rest for 5 minutes before slicing. Garnish with fresh cilantro or parsley and lemon/lime slices. Serve hot with your favorite sides.
