White Chocolate Cranberry Pecan Clusters

Instructions

Step 1: Toast the Pecans

  1. Preheat your oven to 350°F (175°C).
  2. Spread the chopped pecans on a baking sheet in a single layer.
  3. Toast in the oven for 5–7 minutes, stirring once halfway through, until fragrant and slightly golden. Allow them to cool completely.

Step 2: Melt the White Chocolate

  1. Place the white chocolate chips in a heatproof bowl.
  2. Melt the chocolate using a double boiler or in the microwave:
    • Double Boiler Method: Place the bowl over a pot of simmering water, stirring constantly until smooth.
    • Microwave Method: Heat the chocolate in 30-second intervals, stirring between each, until fully melted.
  3. Stir in the vanilla extract and a pinch of salt for added flavor.

Step 3: Combine the Ingredients

  1. Fold the toasted pecans and dried cranberries into the melted white chocolate. Ensure the mixture is evenly coated.

Step 4: Form the Clusters

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Drop spoonfuls of the mixture onto the prepared sheet, shaping them into clusters.
  3. Optionally, sprinkle the clusters with extra pecans, cranberries, or decorative toppings.

Step 5: Chill and Set

  1. Refrigerate the clusters for at least 30 minutes, or until the chocolate is firm.
  2. Once set, transfer the clusters to an airtight container for storage or arrange them on a serving platter.
