Instructions
Step 1: Toast the Pecans
- Preheat your oven to 350°F (175°C).
- Spread the chopped pecans on a baking sheet in a single layer.
- Toast in the oven for 5–7 minutes, stirring once halfway through, until fragrant and slightly golden. Allow them to cool completely.
Step 2: Melt the White Chocolate
- Place the white chocolate chips in a heatproof bowl.
- Melt the chocolate using a double boiler or in the microwave:
- Double Boiler Method: Place the bowl over a pot of simmering water, stirring constantly until smooth.
- Microwave Method: Heat the chocolate in 30-second intervals, stirring between each, until fully melted.
- Stir in the vanilla extract and a pinch of salt for added flavor.
Step 3: Combine the Ingredients
- Fold the toasted pecans and dried cranberries into the melted white chocolate. Ensure the mixture is evenly coated.
Step 4: Form the Clusters
- Line a baking sheet with parchment paper or a silicone baking mat.
- Drop spoonfuls of the mixture onto the prepared sheet, shaping them into clusters.
- Optionally, sprinkle the clusters with extra pecans, cranberries, or decorative toppings.
Step 5: Chill and Set
- Refrigerate the clusters for at least 30 minutes, or until the chocolate is firm.
- Once set, transfer the clusters to an airtight container for storage or arrange them on a serving platter.
