Instructions
Step 1: Prepare the Chicken
- Pound the chicken: Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness, about ½ inch, to ensure even cooking.
- Season: Sprinkle the chicken breasts on both sides with salt, pepper, paprika, and chili flakes (if using).
Step 2: Sear the Chicken
- Heat the skillet: Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil and 1 tablespoon of butter.
- Cook the chicken: Add the chicken breasts to the hot skillet and cook for 4-5 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside on a plate.
Step 3: Make the Zesty Basil Sauce
- Sauté garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Cook for 30 seconds until fragrant, being careful not to burn it.
- Add liquids: Stir in the chicken broth, lemon juice, lemon zest, Dijon mustard, honey, and a tablespoon of olive oil. Scrape the bottom of the skillet to deglaze and release any browned bits for extra flavor.
- Simmer: Let the sauce simmer for 3-4 minutes, reducing slightly to concentrate the flavors.
- Add basil and cream: Stir in the chopped fresh basil and, if using, heavy cream or coconut milk. Let the sauce cook for another minute.
Step 4: Combine and Serve
- Return chicken to the skillet: Place the cooked chicken breasts back into the skillet, spooning the sauce over the top. Let the chicken simmer in the sauce for 2-3 minutes to soak up the flavors.
- Garnish and serve: Garnish with additional fresh basil leaves, lemon wedges, and chili flakes, if desired. Serve warm.
