For the Stir Fry
- 1 pound ground turkey (lean or extra-lean)
- 1 pound fresh green beans, trimmed and cut into 1–2 inch pieces
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced or grated
- 2 tablespoons sesame oil or olive oil
For the Sauce
- 1/4 cup low-sodium soy sauce or tamari for a gluten-free option
- 1 tablespoon hoisin sauce (optional, for added sweetness and depth)
- 1 tablespoon honey or brown sugar
- 1 tablespoon rice vinegar
- 1/2 teaspoon red pepper flakes or Sriracha (optional, for heat)
- 1 tablespoon cornstarch, mixed with 1 tablespoon water (for thickening, optional)
For Garnish (Optional)
- Sesame seeds
- Sliced green onions
- Fresh cilantro leaves
Instructions
Step 1: Prepare the Sauce
- In a small mixing bowl, whisk together the soy sauce, hoisin sauce (if using), honey, rice vinegar, and red pepper flakes or Sriracha. Adjust the sweetness and spiciness according to your taste.
- If you prefer a thicker sauce, add the cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) to the sauce. Set aside.
Step 2: Blanch the Green Beans (Optional)
- Bring a pot of water to a boil and add the green beans. Cook for 1-2 minutes until they turn bright green but are still crisp.
- Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
Step 3: Cook the Ground Turkey
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
- Add the ground turkey and cook, breaking it up with a spatula, until it’s browned and fully cooked, about 5-7 minutes.
- Remove the turkey from the skillet and set aside. Drain any excess fat if necessary, leaving a small amount in the pan for the next step.
Step 4: Sauté the Aromatics and Green Beans
- In the same skillet, add another tablespoon of sesame oil if needed. Add the sliced onion and sauté for 2-3 minutes until softened.
- Add the garlic and ginger, cooking for another 1-2 minutes until fragrant.
- Add the blanched green beans to the skillet and stir-fry for 3-4 minutes, or until they’re tender-crisp.
Step 5: Combine Everything
- Return the cooked ground turkey to the skillet with the green beans and onions.
- Pour the prepared sauce over the mixture, stirring to coat everything evenly.
- Cook for another 2-3 minutes, or until the sauce has thickened and everything is well coated. If you used the cornstarch slurry, the sauce should thicken up nicely.
Step 6: Serve and Garnish
- Serve the Asian Ground Turkey and Green Bean Stir Fry hot, garnished with sesame seeds, sliced green onions, and fresh cilantro if desired.
- Enjoy on its own, or serve over rice, noodles, or cauliflower rice for a complete meal.
