  • 1 pound ground turkey (lean or extra-lean)
  • 1 pound fresh green beans, trimmed and cut into 12 inch pieces
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced or grated
  • 2 tablespoons sesame oil or olive oil

For the Sauce

  • 1/4 cup low-sodium soy sauce or tamari for a gluten-free option
  • 1 tablespoon hoisin sauce (optional, for added sweetness and depth)
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes or Sriracha (optional, for heat)
  • 1 tablespoon cornstarch, mixed with 1 tablespoon water (for thickening, optional)

For Garnish (Optional)

  • Sesame seeds
  • Sliced green onions
  • Fresh cilantro leaves

Instructions

Step 1: Prepare the Sauce

  1. In a small mixing bowl, whisk together the soy sauce, hoisin sauce (if using), honey, rice vinegar, and red pepper flakes or Sriracha. Adjust the sweetness and spiciness according to your taste.
  2. If you prefer a thicker sauce, add the cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) to the sauce. Set aside.

Step 2: Blanch the Green Beans (Optional)

  1. Bring a pot of water to a boil and add the green beans. Cook for 1-2 minutes until they turn bright green but are still crisp.
  2. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 3: Cook the Ground Turkey

  1. In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
  2. Add the ground turkey and cook, breaking it up with a spatula, until it’s browned and fully cooked, about 5-7 minutes.
  3. Remove the turkey from the skillet and set aside. Drain any excess fat if necessary, leaving a small amount in the pan for the next step.

Step 4: Sauté the Aromatics and Green Beans

  1. In the same skillet, add another tablespoon of sesame oil if needed. Add the sliced onion and sauté for 2-3 minutes until softened.
  2. Add the garlic and ginger, cooking for another 1-2 minutes until fragrant.
  3. Add the blanched green beans to the skillet and stir-fry for 3-4 minutes, or until they’re tender-crisp.

Step 5: Combine Everything

  1. Return the cooked ground turkey to the skillet with the green beans and onions.
  2. Pour the prepared sauce over the mixture, stirring to coat everything evenly.
  3. Cook for another 2-3 minutes, or until the sauce has thickened and everything is well coated. If you used the cornstarch slurry, the sauce should thicken up nicely.

Step 6: Serve and Garnish

  1. Serve the Asian Ground Turkey and Green Bean Stir Fry hot, garnished with sesame seeds, sliced green onions, and fresh cilantro if desired.
  2. Enjoy on its own, or serve over rice, noodles, or cauliflower rice for a complete meal.
