For the filling:

  • 1 cup crumbled feta cheese
  • 4 ounces cream cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 teaspoon lemon zest

For assembly:

  • 12 sheets of filo pastry, thawed (if frozen)
  • ½ cup unsalted butter, melted

For the hot honey:

  • ½ cup honey
  • 1 teaspoon red pepper flakes (adjust for spice level)
  • ½ teaspoon smoked paprika (optional)

For garnish:

  • Fresh thyme leaves or parsley (optional)

Instructions

  • Prepare the Feta Filling:
    • In a mixing bowl, combine the feta cheese, cream cheese, olive oil, dried oregano, black pepper, and lemon zest.
    • Mix well until smooth and creamy. Set aside.
  • Prepare the Hot Honey:
    • In a small saucepan, warm the honey over low heat. Stir in the red pepper flakes and smoked paprika.
    • Let the mixture simmer for 1–2 minutes, then remove from heat and set aside to cool slightly.
  • Prepare the Filo Sheets:
    • Preheat your oven to 375°F (190°C).
    • On a clean, dry surface, lay out one sheet of filo pastry and brush lightly with melted butter.
    • Place another filo sheet on top, brushing with butter again. Repeat until you have 3 layers.
    • Cut the stacked filo sheets into 4-inch squares (you should get 8 squares per set of 3 sheets).
  • Assemble the Filo Bites:
    • Place about 1 teaspoon of the feta filling in the center of each square.
    • Fold the corners of the square toward the center to form a small pouch, pinching gently to seal.
    • Repeat with the remaining filo sheets and filling.
  • Bake the Bites:
    • Arrange the filled filo bites on a baking sheet lined with parchment paper. Brush the tops lightly with butter.
    • Bake for 12–15 minutes, or until golden brown and crisp.
  • Drizzle with Hot Honey:
    • Remove the baked filo bites from the oven and let them cool for 2–3 minutes.
    • Drizzle each bite with hot honey and garnish with fresh thyme or parsley, if desired.
  • Serve:
    • Arrange the bites on a platter and serve warm. Provide extra hot honey on the side for dipping.
