- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Zest of 1 orange
- 1/2 cup cold unsalted butter, cut into small cubes
- 2/3 cup buttermilk (plus more for brushing)
- 1/4 cup orange marmalade (plus more for serving)
- 1 teaspoon vanilla extract
- Coarse sugar, for sprinkling (optional)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and orange zest until well combined.
- Cut in the butter: Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Add the wet ingredients: In a separate bowl, whisk together the buttermilk, orange marmalade, and vanilla extract. Pour the wet mixture into the dry ingredients and stir with a fork until just combined. The dough will be slightly sticky.
- Shape the scones: Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it together. Pat the dough into a circle about 1 inch thick. Cut the dough into 8 wedges and transfer them to the prepared baking sheet.
- Brush and sprinkle: Brush the tops of the scones with a little buttermilk and sprinkle with coarse sugar, if desired.
- Bake: Bake in the preheated oven for 15–18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Allow them to cool on a wire rack.
- Serve: Serve warm or at room temperature with extra orange marmalade and a pat of butter. Enjoy!
